(5:03 PM) | Adam Kotsko:
The sandwich I am eating
Yes, this is one of "those" blogs.Okay, I was skeptical when I put it on the skillet. I had cut up generous portions of mushrooms (enough to effectively cover the entire surface of the bread), put some sharp cheddar cheese, and then added sliced onion and green pepper -- the filling was taller than the bread. I cooked it slowly, though, on relatively low heat, and the vegetables and cheese definitely ended up "cooking down," leading to a sandwich that by all accounts looks like a normal grilled cheese. At the end of the project, I put the oven back to high heat to produce a little more crispiness in the bread I am using, which usually ends up being a little soggy for reasons I don't fully understand. Overall, a triumph -- and it has vegetables, so it's healthy!
If neither theology nor freelance market research and analysis ends up working out for the long haul, I'm definitely going to try out for the next season of Hell's Kitchen. Either that, or we could go on Nanny 911 to try to get the psycho cat's discipline issues under control.
