(12:25 PM) | Adam Kotsko:
Adam's Pseudo-Mexican Glop
For this recipe, you will need the following:
- One can of black beans
- One cup of rice
- An unspecified number of jalapenos
- Two packets of sauce from El Burrito Loco (I got mine from their Bourbonnais location; other branches are listed on the bag)
- Prepare one cup of rice as listed on the box (bring one cup of water to a boil, insert rice, cover pot, let stand for five minutes).
- While you're doing that, heat the black beans, stirring in jalapenos to taste.
- Drain off the excess black bean juice.
- Pour black bean/jalapeno mixture and Burrito Loco sauce into rice; stir.
- Put mixture into a bowl and enjoy!
Another similar recipe is Jesse's Ramen with Beans, where you prepare Ramen, but you put frozen green beans in with it, then drain off the water and eat it on a plate, almost like it's a Chinese meal. Justin's Grilled Cheese with Egg is another possibility. We eat well at the House Really Near Olivet That's Making the Administration Nervous (formerly the McElroy-Korsh Homeless Shelter).
